Apple Cinnamon Cake


Today, I baked the first of what I’m sure will be many Apple Cinnamon Cakes I make this season. I love this recipe so much, I thought I’d share it –

Apple Cinnamon Cake

1 Box Spice or Yellow / White cake mix
1 Can (21 oz) Pie Filling – Apple, Apple Blend or Peach
3 eggs
Cinnamon Sugar

1. Heat oven to 350F
2. Blend cake mix, pie filling and eggs in bowl. Beat at medium speed for 2 minutes.
3. Pour into a greased 13″ x 9″ pan or two greased 9″ round pans. Sprinkle the top liberally with cinnamon sugar.
4. Bake for 30-35 minutes or until toothpick inserted in center comes out clean.


I personally prefer this with a spice cake. If you only have a white or yellow mix, you can make your own spice mix by adding 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg and 1/2 teaspoon of allspice to the mix.

Steve and I go to Hard Times Cafe occasionally for lunch. They make a really delicious Vegetarian Chili. You can order it served over tater tots. This is so good. I order it every time we go.

Last night, I realized the ground beef I had thawing in the fridge needed to be cooked. I started browning it with no idea what dinner was going to be. “Ooooh, I can make Chili”, I thought.

Our youngest came into the kitchen and asked for dinner. She is not a chili fan so I went to grab something from the freezer for her and it was like angels started to sing – I’d forgotten about the giant bag of tater tots that I had purchased. I put some in the oven to bake.

So, we had chili for dinner. I served it in a flat rim soup bowl that had a layer of tots at the bottom, chili ladled over them and then covered in finely shredded cheddar cheese. OMG, tastebud nirvana.

Really, really yummy. The tots absorb all the chili sauce and they add a wonderful texture to the dish.

Chili recipe is pretty basic –

1 or 2 pounds of ground beef
1 can diced tomatoes Italian style
1 can diced tomatoes Mexican style
2 cans dark red kidney beans
2 packages chili seasoning

Saute the beef. Drain the fat. Add undrained tomatoes and beans and stir. Add chili seasoning and stir. Let simmer covered 20 – 30 minutes on low heat.

While the chili is simmering, put tater tots on a cookie sheet and cook in a 450 degree overn for 18 minutes or so. Broil at the end for crispiness.

Layer tots in the serving dish, cover with chili and then with cheese.
